I searched for a recipe based on the ingredients I had available, and found this. I followed the recipe exactly without pureeing the berries, because I wanted some chunks , and the result is a delicious, creamy, perfectly sweetened, full of strawberry flavor ice cream. Next time, I am going to add a bit of orange zest and orange liquor in place of the vanilla. I will also try using almond extract instead of vanilla and add some mini chocolate chips.

Anything with PB makes me weak in the knees, but I also love a really good quality vanilla bean, coconut or maple walnut.

Add your frozen strawberries and maple syrup and blend until thick and creamy. Do not over blend, or it will become too icy when thawing. If you choose to use xantham gum, add it halfway through blending and do not over blend. Pour the strawberry ice cream mixture into the frozen loaf tin.
